Salmon and Corn Fritters

 2 potatoes, chopped
 2 zucchinis, grated
 105 g canned red salmon, drained
 ½ cup corn kernels
 1 egg, lightly beaten
 ½ cup pine nuts, roughly chopped
 pinch of salt

Cook potatoes in boiling water for 10 minutes or until cooked. Drain and mash.

Sprinkle 1 tsp salt over zucchini, stand for 10 minutes and then rinse in cold water, drain and squeeze out excess water.

Combine mashed potato with prepared zucchini, salmon, egg, corn and mix well.

Form mixture into patties and coat on both sides with pine nuts.

Pan fry patties for 3-4 minutes each side or until golden brown.

Service with salad and sweet chill mayonnaise.
