Combine panko bread crumbs, paprika, garlic powder, Italian seasoning, and salt and pepper in a medium bowl.
Whisk egg and buttermilk in a separate medium sized bowl.
Place chicken pieces in egg mixture to coat, and then let sit for 2-3 minutes.
Heat oil in a large pan over medium heat.
While oil is heating, transfer chicken pieces from buttermilk into panko mixture, and turn to coat each piece until covered in breadcrumbs.
Note: let excess liquid drain off each piece before dropping into panko mixture.
Carefully place panko coated chicken pieces into hot pan and cook until they are golden and cooked through. Be sure to flip each piece; cooking for about 5 minutes each side.
Transfer chicken pieces to a rack or plate to cool.
