Heat oven to 180 degrees (fan forced) and grease cupcake / muffin tins.
Whilst oven is heating, dice onion and cut ham into small pieces.
Beat eggs and place all ingredients in a bowl. Mix together.
Cut shortcrust pastry into small circles (big enough to fit in each muffin tin. Tip: egg rings are a perfect tool to cut perfect sized circles.
Line each muffin tin with a circle of pastry and press in to firmly fit.
Pour mixture into each tray and bake in oven for 15-20 minutes, or until golden brown.
