Mix flour, baking powder and sugar into a large bowl with a small pinch of salt.
Crack in the eggs and whisk until smooth. Add the maple syrup and milk while whisking.
Heat oil and small amount of butter in frying pan on medium heat. Once hot, add spoonfuls of batter to the pan (any size you choose).
Cook until bubbles start to form on the surface, then flip and cook the other side until cooked through - usually a couple of minutes.
Serve with toppings of your choice (Bacon and syrup for American style).
